Ingredients

For the Salmon Bites

  • 12 oz salmon fillet skin removed and cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tbsp low-sodium soy sauce
  • 1 tbso cornstarch
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • pinch of salt
  • pinch of black pepper

For the Honey Garlic Sauce

  • 1 1/2 tbsp honey
  • 1 tbsp soy sauce
  • 1 large garlic clove , minced
  • 1 tsp rice vinegar
  • 1/4 tsp red pepper flakes (optional)

Instructions

  • Prep the salmon. Pat the salmon dry with a paper towel, then cut it into bite-size cubes. This helps the coating stick and gives crispier edges.
  • Season the bites. In a mixing bowl, toss the salmon with olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  • Add the crisp factor. Sprinkle cornstarch over the salmon and gently toss again. The cornstarch is what gives the air-fryer “fried” texture.
  • Air fry. Preheat the air fryer to 400°F (200°C). Arrange the salmon cubes in a single layer (no overlapping). Air fry for 6–8 minutes, shaking halfway, until golden and slightly crisp on the edges.

  • Make the honey garlic glaze. While the salmon cooks, heat honey, soy sauce, garlic, rice vinegar, and chili flakes in a small pan over low heat for 2–3 minutes, until glossy.
  • Finish with glaze. Transfer the salmon bites to a bowl and pour the warm honey garlic sauce over the top. Toss gently to coat.
  • Serve. Serve immediately with rice, broccoli, or your favorite veggie bowl base.

Notes

  • Make it spicier: Add extra chili flakes or a drizzle of sriracha.
  • Gluten-free option: Use tamari instead of soy sauce.
  • Meal prep: These bites reheat beautifully in the air fryer for 2–3 minutes.
