Prep the salmon. Pat the salmon dry with a paper towel, then cut it into bite-size cubes. This helps the coating stick and gives crispier edges.
Season the bites. In a mixing bowl, toss the salmon with olive oil, soy sauce, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Add the crisp factor. Sprinkle cornstarch over the salmon and gently toss again. The cornstarch is what gives the air-fryer “fried” texture.
Air fry. Preheat the air fryer to 400°F (200°C). Arrange the salmon cubes in a single layer (no overlapping). Air fry for 6–8 minutes, shaking halfway, until golden and slightly crisp on the edges.
Make the honey garlic glaze. While the salmon cooks, heat honey, soy sauce, garlic, rice vinegar, and chili flakes in a small pan over low heat for 2–3 minutes, until glossy.
Finish with glaze. Transfer the salmon bites to a bowl and pour the warm honey garlic sauce over the top. Toss gently to coat.
Serve. Serve immediately with rice, broccoli, or your favorite veggie bowl base.
